Sassafras tea is delicious. I'm lucky to have a good supply of the tree roots from which it's made. Five or six pieces of root, 1/2 to 3/4 inch in diameter and 4 or 5 inches long will make a good batch (gallon or more). Clean the roots by rinsing and brushing off dirt or mud. Put a gallon to a gallon and a half water in a stock pot and bring to a boil. Add the roots and boil for about fifteen or twenty minutes. Dip some out using a measuring cup or cup with handle (to keep from scalding your fingers) and check for color. If it's beginning to 'color up' (anywhere from pink to 'tea brown') it's probably ready. Strain a bit, add a little sugar and let cool enough to taste. If it's good ... it's tea. Remove stock pot from heat and strain tea into container. I like to use glass to store tea in fridge. I have some old one gallon glass jugs that I prefer. Once strained (I use coffee filters), I sweeten to taste and store in the fridge. In the glass jugs, with a good lid on, it will keep for months and actually improves in flavor as it ages for a bit. Good chilled, even better HOT. Try a mug full of warm or hot tea before bed at night .... AHHHHHHHHHHHHHHHHHH .........
