Chicken of the Woods is very much like chicken in texture and taste. It's a wonderful addition to my list of edibles. These beautiful 'shelves' of fungi are brushed clean and for the stir fry cut into strips much like french fries. I like to cook them a bit in a skillet with lots of butter while I prepare the veggies. I also cut the veggies into strips for stirfry. When the mushrooms are just beginning to brown on the edges, I add the veggies to the skillet and combine. At this point I season. Salt, course black pepper and some dry taco seasoning. I let every thing simmer until the veggies just start to caramelize and juices start cooking into the skillet then I like to add about a half a cup of lemon juice. You can see this cooked in in the photo. When the veggies are near done (I like them cooked pretty soft but not mushy), I sprinkle flour over everything and stir it in quickly, turning it in to the stir fry lightly coating everything. I don't use the flour for browning. I use it as 'glue' to hold more of the juices and lemon juice onto the stirfry. I do this with all my stirfry recipes. This isn't nearly as difficult as all this narrative makes it sound. It's basic, easy and freaking delicious. Note the beautiful glossy glow all that juice and flour gives the stir fry.

Jim it is a good stirfry. I've even made jerky out of these shrooms.
