This is an "artsy" shot of some salsa I made and canned this summer. Took several photos so I could put it on a message board (and it's even floating around Pinterest...) I just like all the color of the tomatoes and peppers, fresh out of the garden and into the sink...

And if interested, this is the recipe I use: nchfp.uga.edu/how/can_salsa/chile_salsa_II.htmlI just use any mix of tomatoes and peppers that are ripe (there are more than 10 varieties of each in the garden), and instead of vinegar, I use bottled lime juice or half lime, half lemon juice (in canning recipes, you can replace vinegar with lime or lemon juice, but you should not substitute the other way around--if a recipe calls for lemon juice, don't use vinegar, it's not acidic enough).

OOOOOH BOY !!! Salsa! I love it! I am so happy to see this addition to our site. The photos are great, clear and the colors ... ! It was so wet here this past spring that I did not get to till up a patch for a garden. I am missing it severely now. I like making salsa. I use a package mix from Mrs. Wages. It's my favorite. I use a canner and boiling bath like you do too. I did make one run this summer from canned tomatoes and froze it. It's not nearly as good frozen. I'm going to snag that recipe and I think if we don't have it already, I'll add a recipe thread here.

The pictures from the first post do not show up and the link goes to a page not found. Maybe it's just my computer it is about dead.

Sorry robin7, les, apple has not been in and I assume took the photos down. Her posts are empty. No pics, no links. Sam
