The Jerusalem Artichoke grows in patches. Usually there will be several plants together. They have tall (sometimes 6 feet) woody stalks and to me, beautiful yellow blossoms. A bonus is, they have a tuberous root that can be eaten. Many liken them to a small potato and they can even be cooked and mashed like potatoes.
